McKNIGHT, Darrell Elwyn - passed away at the Hamilton General Hospital on Sunday, July 20th, 2025 in his 67th year.  Beloved brother of Terry McKnight (Louise) and Linda Eccles (Terry).  Caring uncle to Linda’s children John and Lara and Terry’s children Michael, Jennifer, Jessica & Brody.  Cherished friend of Will Stratford and his team.  Darrell grew up in Simcoe and spent the majority of his life here.  He was retired chef who worked both in the Simcoe area and many other locations across Canada.  He was known in Simcoe and regularly seen on his e-bike travelling around town.  A private interment of ashes will be held at a later date.  The JASON SMITH FUNERAL CHAPEL, 689 Norfolk St. North Simcoe in care of arrangements.  Those wishing to donate in memory of Darrell are asked to consider the Canadian Diabetes Association.  The family invite Darrell’s friends to share memories of him with each other or through online condolences at www.smithfuneralchapel.com
